Creating mozzarella from curd is not just about following a recipe; it’s about embracing a few key tips to ensure success:

  • Temperature Control: Maintain the correct water and curd temperatures for optimal texture.
  • Gentle Handling: Stir and knead the curd gently to achieve a smooth, shiny finish.
  • Proper Shaping: Use molds or hands to shape the mozzarella into a desired form, ensuring it is firm and well-formed.

Mozzarella from Curd: Chef Serge’s Recipe

 

Ingredients:

 

– 1 lb. mozzarella curd

– 10 cups of water

– 1 tablespoon sea salt

 

Step-by-Step Guide:

 

Step 1: Prepare the Water Bath  

Heat 10 cups of water in a pot to around 185°F. This will be used for warming and stretching the curd.

 

Step 2: Warm the Curd  

Cut the curd into small pieces and place them in a large bowl. Pour the warm water around the edges, covering the mozzarella. Stir gently until the curds soften, about 2 minutes.

 

Step 3: Heat the Curd  

Drain the water, add salt to the curd, and slowly add more water while stirring until the mixture reaches 160°F.

 

Step 4: Stretching and Kneading  

Using a wooden spoon and gloves, knead and stretch the curd until smooth and shiny. Reheat with hot water if necessary.

 

Step 5: Shaping the Mozzarella  

Shape the curds into a ball or desired shape, using a mold if preferred. Press gently to remove excess whey.

 

Step 6: Letting it Rest  

Let the mozzarella rest at room temperature for 30 minutes to an hour. This helps develop the flavors and firm up the cheese. 

 

Once rested, the mozzarella is ready to eat. Store in the refrigerator in an airtight container or wrap in plastic wrap.

Mozzarella Cheese Sandwich

Ingredients:

  • 4 slices of sourdough bread
  • 8 oz. fresh mozzarella cheese, sliced
  • 1 large tomato, sliced
  • Sundried tomato pesto (recipe below)
  • Fresh basil leaves, chiffonade
  • Extra virgin olive oil or softened butter for spreading
  • Salt and pepper to taste

Instructions:

  1. Preheat a panini press, grill pan, or skillet over medium heat.
  2. Take two slices of bread and spread a thin layer of softened butter or olive oil on one side of each slice.
  3. Place the bread slices, oil/butter side down, on a clean surface or cutting board. On two slices of bread, spread the sundried tomato pesto and layer the mozzarella cheese.
  4. Add tomato slices on top of the mozzarella cheese and season with salt and pepper. Place fresh basil leaves on top of the tomatoes. Top with the other slice of bread, oil/butter side up.
  5. Place the sandwich onto the preheated panini press, grill pan, or skillet.
  6. If using a panini press, close the lid and cook for about 4-5 minutes, or until the bread is golden brown and the cheese is melted.
  7. If using a grill pan or skillet, place a heavy object (like a cast-iron skillet or a panini press weight) on top of the sandwich to press it down. Cook for about 2-3 minutes on each side, flipping once, until the bread is toasted and the cheese is melted.
  8. Once the sandwich is cooked to your liking, remove it from the heat and let it cool for a minute or two.

Feel free to customize the sandwich by adding other ingredients like sliced ham, roasted red peppers, or basil pesto. Enjoy!

Ingredients:

  • 1 cup sun-dried tomatoes (packed in oil), drained
  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup freshly grated Parmesan Reggiano cheese
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. In a food processor or blender, combine the sun-dried tomatoes, basil leaves, pine nuts, garlic, and Parmesan cheese.
  2. Pulse the mixture a few times to break down the ingredients.

On July 26th, 2024, Vibrant Occasions Catering had the pleasure of participating in The Blushing Bridal Fashion Show: Married in a New York Minute, an event that brought the chic, fast-paced energy of New York City to the heart of North Little Rock. Hosted by The Bridal Cottage and co-hosted by Central Arkansas Entertainment, this event transformed The Bridal Cottage into a scene straight out of the Big Apple, complete with a black-and-white checkered catwalk and themed decor that would make any New Yorker feel right at home.

 

As guests entered the venue at 3305 John F Kennedy Blvd, they were greeted by a stylish backdrop that set the tone for the evening: a bold illustration of a yellow taxi cab against the iconic New York City skyline, with the event’s name proudly displayed—Married in a New York Minute. The atmosphere was electric, with every detail meticulously planned to capture the essence of New York City, from the Times Square and Broadway signs on the cocktail tables to the Southern Sippery’s cleverly named bar station, “Upper East Side Station.”

The fashion show itself was a stunning display of the latest bridal trends, with The Bridal Cottage showcasing an array of bridal gowns, bridesmaids’ dresses, and tuxedos in an intimate setting that allowed attendees to experience each look up close. With live music from Ben & Doug, runway tunes by DJ Mario Luna, and professional glamming by Blush & Glow Hair and Makeup Artists, the models strutted down the catwalk, turning heads and inspiring future brides.

 

But no New York-inspired event would be complete without delicious food, and that’s where Vibrant Occasions came in. We were thrilled to serve an array of appetizers including cheese-stuffed mushrooms, mac & cheese ‘tini’s and sticky Asian pork belly bites that complemented the evening’s theme, offering a taste of the elegance and sophistication that the Big Apple is known for. Whether guests were indulging in our flavorful bites or sipping on specialty cocktails from Southern Sippery, the culinary experience added an extra layer of luxury to the evening.

 

The event was not just about fashion and food; it was also about creating memories. Guests had the opportunity to make their own mini bouquets at Curly Willow’s DIY bouquet table, capture memories with Blu Stu Videography and Nguyen Photography, and even get in on some fantastic giveaways, including an engagement shoot, bachelorette cocktail class, and high-end skin treatments.

As the evening came to a close, attendees left with swag bags filled with treats, including a $200 facial from Pine River Aesthetics, a Bride wine cup, and more—a perfect end to a night that was as glamorous as it was unforgettable.

Wok Charred Beef Recipe

 

Ingredients:

1 1/2 pounds beef filet steak, thinly sliced

1/2 green bell pepper, chunked

1/2 red bell pepper, chunked

1/2 yellow onion, chunked

1/4 pound portobello mushroom, chunked

1/2 teaspoon garlic, minced

1 dried red chili pepper (optional)

 

Marinade:

1 tablespoon soy sauce

3 tablespoons oyster sauce

2 tablespoons sugar

2 teaspoons sesame oil

4 tablespoons water

 

Kung Pao Sauce:

3 tablespoons soy sauce

1 teaspoon hoisin sauce

1 teaspoon oyster sauce

1 teaspoon ketchup

2 tablespoons sugar

1/2 teaspoon granulated garlic

1/2 teaspoon white pepper

3 tablespoons water

Instructions:

 

In a bowl, mix all the ingredients for the marinade and set it aside.

 

In another bowl, mix all the ingredients for the Kung Pao Sauce and set it aside.

 

Thinly slice the beef filet and place it in a bowl. Add the marinade to the beef and let it marinate for 1 hour.

 

Heat sesame oil in a wok over high heat. Add the green and red bell peppers, as well as the onion. Stir-fry them for a few minutes until they are slightly tender. Remove the vegetables from the wok and set them aside.

 

Add a little more sesame oil to the wok and add the portobello mushrooms. Stir-fry the mushrooms until they are about halfway cooked, then add the minced garlic and dried chili pepper (if using). Continue to stir-fry until the mushrooms are cooked.

 

Return the peppers and onions to the wok with the mushrooms. Add half of the prepared Kung Pao Sauce to the wok and stir everything together. Remove the vegetables from the wok and set them aside to keep warm.

 

Working in batches, cook the marinated beef slices in the wok until they are charred and cooked through. Once all the beef is cooked, return it all to the wok and add the remaining half of the Kung Pao Sauce. Stir everything together to coat the beef.

 

Finally, return the cooked vegetables to the wok with the beef and sauce. Heat everything through, making sure the beef and vegetables are well-coated in the sauce.

 

Once heated through, remove the Wok Charred Beef from the wok and serve hot.

Caribbean Citrus Chicken Recipe

 

Ingredients:

1 medium onion, chopped

2 green onions, chopped

4 garlic cloves, chopped

1/2 teaspoon five-spice powder

2 teaspoons allspice berries, coarsely ground

1/2 teaspoon dried thyme, crumbled

1 Jalapeno pepper, chopped

2 teaspoons salt

1/2 tablespoon ground pepper

1/3 cup soy sauce

1 tablespoon Worcestershire sauce

1/2 tablespoon Grapeseed oil

1 3 1/2- to 4-pound chicken, cut into 8 pieces

2 cups Mango Salsa (recipe below)

 

Instructions:

 

In a blender, combine the chopped onion, green onions, garlic cloves, five-spice powder, allspice berries, dried thyme, chopped Jalapeno pepper, salt, soy sauce, and Worcestershire sauce. Blend the ingredients for 15 to 30 seconds until you have a smooth marinade.

 

Pour the marinade into a large, shallow dish. Add the chicken pieces to the dish, turning them to coat them evenly with the marinade. Cover the dish and refrigerate it overnight to allow the flavors to infuse into the chicken. Make sure to bring the chicken to room temperature before proceeding.

 

Preheat your grill pan over medium-high heat. Once the pan is hot, grill the marinated chicken pieces, turning them occasionally, for about 6 minutes on each side. This will help brown the chicken and give it a delicious charred flavor.

 

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Transfer the grilled chicken pieces to a baking dish and place them in the preheated oven. Bake the chicken for 20 to 30 minutes or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius). This ensures that the chicken is cooked through.

 

While the chicken is baking, prepare the Mango Salsa, which will add a fresh and tangy contrast to the spicy chicken.

 

Mango Salsa:

2 ripe mangoes, peeled, pitted, and diced

1/2 red bell pepper, diced

1/2 small red onion, finely chopped

1 small jalapeno pepper, seeded and minced

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro leaves, chopped (optional)

In a bowl, combine the diced mangoes, red bell pepper, red onion, minced jalapeno pepper, and lime juice. Season with salt and pepper to taste. Add chopped cilantro leaves if desired. Stir everything together until well combined. Refrigerate the salsa until ready to serve.

 

Once the chicken is cooked, remove it from the oven and brush it with zhoug sauce for added flavor and a glossy finish. Return the chicken to the oven for an additional 2 minutes to allow the sauce to set.

 

Remove the chicken from the oven and let it rest for about 8 minutes. This allows the juices to redistribute and ensures a moist and tender chicken.

 

Serve the Caribbean  Chicken with the prepared Mango Salsa on the side. The salsa adds a refreshing and fruity element to balance the heat of the jerk chicken.

Zhoug Recipe

 

Ingredients:

1 jalapeno pepper, seeded (for a milder version, you can use half a jalapeno)

2 cloves garlic

4-5 ounces fresh cilantro

1/2 teaspoon ground cardamom

1 teaspoon ground cumin

1/2 teaspoon salt

1/3 cup grapeseed oil (you can adjust the amount for desired consistency)

2 tablespoons lemon juice

1/2 teaspoon optional crushed red pepper flakes (for added heat)

Instructions:

 

Place the jalapeno pepper (seeded), garlic cloves, fresh cilantro, ground cardamom, ground cumin, and salt in a food processor. Pulse the ingredients until they are uniformly chopped and well combined.

 

Slowly add the grapeseed oil and lemon juice to the food processor while it’s running. Process the mixture until you achieve a coarse paste. If you prefer a looser consistency, you can add a bit more oil.

 

Taste the sauce and adjust the seasoning by adding more salt or heat if necessary. If you like your sauce spicier, you can add optional crushed red pepper flakes.

 

Zhoug sauce is now ready to be used as a condiment or marinade for various dishes. You can store it in an airtight container in the refrigerator for up to a week. Enjoy the vibrant flavors of Zhoug!

On May 23, 2024, the ALS In Wonderland Foundation’s 10th Annual ALS Soirée brought the whimsical world of Willy Wonka to life at the Junior League of Little Rock. As the exclusive caterer for the event, Vibrant Occasions was honored to create a menu that transported guests into “A World of Pure Imagination.” Let’s take a stroll down memory lane and explore the magical dishes that delighted everyone’s taste buds.

 

To add an extra layer of enchantment to the evening, the Vibrant Occasions staff fully embraced the whimsical theme by dressing up in delightful costumes. Some staff members wore chocolate brown shirts with white aprons, embodying the spirit of the confectionery wonderland. Our very own Willy Wonka charmed guests with a charismatic presence, while another staffer dressed as the cowboy character named Mike Teavee from the movie adding a playful touch. We even had a Veruca Salt among us, bringing her signature sass to the event. This immersive approach not only delighted guests but also showcased our commitment to making the soirée a truly magical and memorable experience.

A Whimsical Start: Passed Hors d’Oeuvres

 

Remember that iconic scene with Violet Beauregarde and the blueberry gum? Inspired by that, we served up Sticky Asian Pork Belly on a bed of blueberry sushi rice, blending savory and sweet flavors. This dish mirrored the unexpected twist of the movie scene, offering a playful and delicious homage.

 

Our Tomato Bisque Shooters were a comforting delight, rich and creamy, served in adorable miniature cups. Paired with a blueberry brie grilled cheese, this dish added a touch of cozy sophistication, evoking memories of childhood lunches with a whimsical twist.

 

The industrious Oompa Loompas, with their mischievous grins and boundless energy, inspired our Oompa Loompia Rolls. These savory bites, wrapped in crispy lumpia and served with a sweet chili dipping sauce, added a perfect touch of Wonka magic, bringing to life the essence of those quirky workers.

And who could forget the whimsical golden eggs from the movie? Our Deviled “Golden Eggs” were a delightful nod to those precious treasures, adding a touch of fun to the evening.

Small Plate Stations: A Feast for the Senses

 

For the main event, we created several themed small plate stations. The TV Dinner Station, a nostalgic nod to the old, vintage aluminum TV Dinner trays, featured Cabernet Braised Beef Short Ribs served with Purple Mashed Potatoes. These vibrant potatoes were also a playful reference to the blueberry gum scene and added a splash of color to our vintage TV dinner trays they were served in.

At our Chocolate River Station, we paid tribute to the famous chocolate river with a flowing river of melted milk and white chocolate, complete with a variety of dippers. Guests indulged in this sweet experience, reminiscent of Augustus Gloop’s chocolatey adventure.

The Popcorn Bar Station was another fan favorite, offering freshly-popped popcorn with an array of Wonka-inspired seasonings. This interactive station brought to mind the fun and unpredictability of the Wonka factory.

To capture the effervescent spirit of Willy Wonka’s bubble room, we set up the Bubbles, Bubbles Everywhere Station with colorful fizzy mocktails. These drinks added a bubbly, refreshing twist to the evening, delighting guests of all ages.

Reflecting on a Magical Evening

The evening was not just about fantastic food; it was a celebration of creativity, community, and a cause close to our hearts. The ALS In Wonderland Foundation, founded by Lara Blume McGee in memory of her father, supports ALS patients and their families in Arkansas. The annual ALS Soirée is a reflection of their tireless efforts and dedication.
