Family-style dining involves serving dishes on large platters placed in the center of the table, allowing guests to serve themselves. This setup encourages interaction, conversation, and a sense of togetherness that is often missing in more traditional catering formats. However, not every catering company offers family-style dining due to the complexity and coordination required to pull it off seamlessly.

 

Etiquette and Logistics of Family-Style Dining

 

To ensure a successful family-style dinner, certain logistics and etiquettes must be adhered to:

 

Table Setup: Tables should be arranged with minimal decorations to allow enough space for the large serving platters. Each table should accommodate a maximum of eight guests to facilitate easy passing of dishes.

   

Serving Platters and Utensils: The serving platters should be easy to handle, and each dish should have appropriate serving utensils to maintain hygiene and ease of use.

   

Pre-set Items: Some items, such as dinner rolls and drinks, should be pre-set to avoid congestion during the meal.

Staff Coordination: Adequate staff is essential to manage the seamless flow of food from the kitchen to the table and to assist guests as needed.

A Magical Wonka-Inspired Menu at ALS In Wonderland Foundation’s 10th Annual Soirée

On May 23, 2024, the ALS In Wonderland Foundation’s 10th Annual ALS Soirée brought the whimsical world of Willy Wonka to life at the Junior League of Little Rock. As the exclusive caterer for the event, Vibrant Occasions was honored to create a menu that transported guests into “A World of Pure Imagination.” Let’s take a stroll down memory lane and explore the magical dishes that delighted everyone’s taste buds.

 

To add an extra layer of enchantment to the evening, the Vibrant Occasions staff fully embraced the whimsical theme by dressing up in delightful costumes. Some staff members wore chocolate brown shirts with white aprons, embodying the spirit of the confectionery wonderland. Our very own Willy Wonka charmed guests with a charismatic presence, while another staffer dressed as the cowboy character named Mike Teavee from the movie adding a playful touch. We even had a Veruca Salt among us, bringing her signature sass to the event. This immersive approach not only delighted guests but also showcased our commitment to making the soirée a truly magical and memorable experience.

A Whimsical Start: Passed Hors d’Oeuvres

 

Remember that iconic scene with Violet Beauregarde and the blueberry gum? Inspired by that, we served up Sticky Asian Pork Belly on a bed of blueberry sushi rice, blending savory and sweet flavors. This dish mirrored the unexpected twist of the movie scene, offering a playful and delicious homage.

 

Our Tomato Bisque Shooters were a comforting delight, rich and creamy, served in adorable miniature cups. Paired with a blueberry brie grilled cheese, this dish added a touch of cozy sophistication, evoking memories of childhood lunches with a whimsical twist.

 

The industrious Oompa Loompas, with their mischievous grins and boundless energy, inspired our Oompa Loompia Rolls. These savory bites, wrapped in crispy lumpia and served with a sweet chili dipping sauce, added a perfect touch of Wonka magic, bringing to life the essence of those quirky workers.

And who could forget the whimsical golden eggs from the movie? Our Deviled “Golden Eggs” were a delightful nod to those precious treasures, adding a touch of fun to the evening.

Small Plate Stations: A Feast for the Senses

 

For the main event, we created several themed small plate stations. The TV Dinner Station, a nostalgic nod to the old, vintage aluminum TV Dinner trays, featured Cabernet Braised Beef Short Ribs served with Purple Mashed Potatoes. These vibrant potatoes were also a playful reference to the blueberry gum scene and added a splash of color to our vintage TV dinner trays they were served in.

At our Chocolate River Station, we paid tribute to the famous chocolate river with a flowing river of melted milk and white chocolate, complete with a variety of dippers. Guests indulged in this sweet experience, reminiscent of Augustus Gloop’s chocolatey adventure.

The Popcorn Bar Station was another fan favorite, offering freshly-popped popcorn with an array of Wonka-inspired seasonings. This interactive station brought to mind the fun and unpredictability of the Wonka factory.

To capture the effervescent spirit of Willy Wonka’s bubble room, we set up the Bubbles, Bubbles Everywhere Station with colorful fizzy mocktails. These drinks added a bubbly, refreshing twist to the evening, delighting guests of all ages.

Reflecting on a Magical Evening

The evening was not just about fantastic food; it was a celebration of creativity, community, and a cause close to our hearts. The ALS In Wonderland Foundation, founded by Lara Blume McGee in memory of her father, supports ALS patients and their families in Arkansas. The annual ALS Soirée is a reflection of their tireless efforts and dedication.

Caribbean Citrus Chicken Recipe

 

Ingredients:

1 medium onion, chopped

2 green onions, chopped

4 garlic cloves, chopped

1/2 teaspoon five-spice powder

2 teaspoons allspice berries, coarsely ground

1/2 teaspoon dried thyme, crumbled

1 Jalapeno pepper, chopped

2 teaspoons salt

1/2 tablespoon ground pepper

1/3 cup soy sauce

1 tablespoon Worcestershire sauce

1/2 tablespoon Grapeseed oil

1 3 1/2- to 4-pound chicken, cut into 8 pieces

2 cups Mango Salsa (recipe below)

 

Instructions:

 

In a blender, combine the chopped onion, green onions, garlic cloves, five-spice powder, allspice berries, dried thyme, chopped Jalapeno pepper, salt, soy sauce, and Worcestershire sauce. Blend the ingredients for 15 to 30 seconds until you have a smooth marinade.

 

Pour the marinade into a large, shallow dish. Add the chicken pieces to the dish, turning them to coat them evenly with the marinade. Cover the dish and refrigerate it overnight to allow the flavors to infuse into the chicken. Make sure to bring the chicken to room temperature before proceeding.

 

Preheat your grill pan over medium-high heat. Once the pan is hot, grill the marinated chicken pieces, turning them occasionally, for about 6 minutes on each side. This will help brown the chicken and give it a delicious charred flavor.

 

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Transfer the grilled chicken pieces to a baking dish and place them in the preheated oven. Bake the chicken for 20 to 30 minutes or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius). This ensures that the chicken is cooked through.

 

While the chicken is baking, prepare the Mango Salsa, which will add a fresh and tangy contrast to the spicy chicken.

 

Mango Salsa:

2 ripe mangoes, peeled, pitted, and diced

1/2 red bell pepper, diced

1/2 small red onion, finely chopped

1 small jalapeno pepper, seeded and minced

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro leaves, chopped (optional)

In a bowl, combine the diced mangoes, red bell pepper, red onion, minced jalapeno pepper, and lime juice. Season with salt and pepper to taste. Add chopped cilantro leaves if desired. Stir everything together until well combined. Refrigerate the salsa until ready to serve.

 

Once the chicken is cooked, remove it from the oven and brush it with zhoug sauce for added flavor and a glossy finish. Return the chicken to the oven for an additional 2 minutes to allow the sauce to set.

 

Remove the chicken from the oven and let it rest for about 8 minutes. This allows the juices to redistribute and ensures a moist and tender chicken.

 

Serve the Caribbean  Chicken with the prepared Mango Salsa on the side. The salsa adds a refreshing and fruity element to balance the heat of the jerk chicken.

Zhoug Recipe

 

Ingredients:

1 jalapeno pepper, seeded (for a milder version, you can use half a jalapeno)

2 cloves garlic

4-5 ounces fresh cilantro

1/2 teaspoon ground cardamom

1 teaspoon ground cumin

1/2 teaspoon salt

1/3 cup grapeseed oil (you can adjust the amount for desired consistency)

2 tablespoons lemon juice

1/2 teaspoon optional crushed red pepper flakes (for added heat)

Instructions:

 

Place the jalapeno pepper (seeded), garlic cloves, fresh cilantro, ground cardamom, ground cumin, and salt in a food processor. Pulse the ingredients until they are uniformly chopped and well combined.

 

Slowly add the grapeseed oil and lemon juice to the food processor while it’s running. Process the mixture until you achieve a coarse paste. If you prefer a looser consistency, you can add a bit more oil.

 

Taste the sauce and adjust the seasoning by adding more salt or heat if necessary. If you like your sauce spicier, you can add optional crushed red pepper flakes.

 

Zhoug sauce is now ready to be used as a condiment or marinade for various dishes. You can store it in an airtight container in the refrigerator for up to a week. Enjoy the vibrant flavors of Zhoug!

At Vibrant Occasions Catering, we believe in giving back to the community and supporting causes that make a difference. That’s why we were thrilled to partner with the EMpact One Foundation for their “Breakfast with an EMpact 2024” event. This fundraiser, held on July 18, 2024, at First Security Bank in Benton, Arkansas, was a resounding success, raising over $5,400 and serving 325 meals to benefit youth in extracurricular activities.

A Morning to Remember

 

The event kicked off bright and early, with community members lining up from 6:30 AM to 10:00 AM to enjoy a delicious breakfast while supporting a great cause. Participants had the option to donate meals, including our famous OMG! French Toast and the ever-popular Brisket Taco Breakfast Bowl. Both options were so well-received that they sold out quickly, showcasing the community’s enthusiasm for both the food and the cause.

Community Support and Gratitude

 

The response from the community was overwhelming. EMpact One Foundation shared their heartfelt thanks on social media, stating:

Recently, Chef Serge Krikorian made an appearance on THV 11’s The Vine, where he whipped up some mouthwatering side dishes perfect for any summer event. Whether you’re hosting a pool party, a casual backyard BBQ, or a festive gathering, these recipes are sure to impress your guests. Let’s dive into these summer delights and explore how to make the most of them at your next event!

Mexican Street Corn Recipe

 

Mexican Street Corn is a vibrant and flavorful dish that’s perfect for any summer gathering. The combination of sweet corn, creamy mayonnaise, tangy cotija cheese, and a hint of spice makes it an irresistible side dish.

 

Ingredients:

 

4 ears Sweet Corn on the Cob

2 Tbls. Unsalted Butter, softened

1 tsp. Kosher Salt

1/2 tsp. Ground Black Pepper

3 Tbls. Mayonnaise

1/4 tsp. Garlic Powder

1/2 cup Cotija Cheese, crumbled

3 Tbls. Fresh Cilantro, chopped

1/2 tsp. Chipotle Chili Powder (ancho chile powder works too)

1 lime, quartered

 

Instructions:

 

  1. Peel the corn, leaving the husks attached, and remove the silk.
  2. Combine softened butter, salt, and black pepper, and rub the mixture over the corn. Re-wrap the corn with the husks and wrap each ear in foil, poking the foil with a fork to create vent holes.
  3. Grill the corn for 20 minutes, turning occasionally until cooked.
  4. Mix garlic powder with mayonnaise in a small bowl. Place cotija cheese on a plate.
  5. Remove husks, brush the corn with garlic mayonnaise, roll in cotija cheese, and sprinkle with cilantro and chili powder.
  6. Serve with lime wedges.

 

This dish is perfect for a casual backyard BBQ or a festive 4th of July celebration. Pair it with grilled meats, fresh salads, and a variety of salsas and dips for a truly festive feast.

Grilled Skillet Potatoes Recipe

Ingredients:

 

2 lbs Yukon gold potatoes, sliced into 1/2” rounds

2 Tbls. Grapeseed Oil

1 tsp. Kosher Salt

1/2 tsp. Ground Black Pepper

1 tsp. Garlic Powder

1/2 tsp. Chili Powder

1/2 tsp. Ground Cumin

 

Instructions:

 

  1. Preheat the grill to medium-high (400-450° F).
  2. Toss potato slices with oil and seasonings until evenly coated.
  3. Preheat a cast-iron skillet or grill basket on the grill, then transfer the potatoes to the skillet.
  4. Grill over direct heat for 15-20 minutes, stirring to brown on all sides. Move to indirect heat for an additional 10 minutes or until golden and cooked through.

 

These potatoes are ideal for a picnic or outdoor potluck. Serve alongside grilled chicken, burgers, or sausages. Add a refreshing cucumber salad and some lemonade for a complete summer meal.

Watermelon Feta Salad Recipe

 

Watermelon Feta Salad is a refreshing and colorful dish that brings a burst of flavor to any summer table. The sweet watermelon, juicy blueberries, and creamy feta create a delightful balance of tastes and textures.

 

Ingredients:

 

6 cups Fresh Watermelon, cut into 1” slabs

4 Tbls. Olive Oil (a fruity flavored olive oil is best)

1 pint Fresh Blueberries

4 oz. Feta Cheese, cut into cubes

2 Tbls. Fresh Basil, chopped

1/4 tsp. Kosher Salt

Balsamic Glaze, drizzled on top to taste

 

Instructions:

 

  1. Preheat the grill.
  2. Brush watermelon slabs with olive oil and grill for 2-3 minutes per side until marked and warm.
  3. Remove from the grill, cut off the rind, and cube the watermelon. Toss with blueberries.
  4. Gently stir in feta cubes, drizzle with balsamic reduction, and garnish with basil and salt.

Hosted by local creatives and philanthropists Cat Sims, Sarah Oden, and Kimberly Cyr, “Revival” transformed Little Rock into a hub of elegance and innovation. The event celebrated the convergence of art and fashion, creating a sophisticated ambiance that was both inspiring and unforgettable.

 

As the exclusive caterer for “Revival,” Vibrant Occasions was thrilled to design a culinary experience that matched the event’s high standards of creativity and sophistication. From the moment guests arrived, we aimed to tantalize their taste buds and elevate their evening with our gourmet offerings.

 

A Display of Culinary Excellence

 

At Vibrant Occasions, we believe in starting the evening with a feast for the senses. For “Revival: An Evening of Art and Fashion,” we showcased a beautifully arranged charcuterie display for guests to graze. Guests were invited to indulge in a selection of savory meats, fine cheeses, and Mediterranean dips. This visually stunning and delectable spread set the tone for the night, encouraging guests to savor the flavors and enjoy the culinary artistry we pride ourselves on.

From 6:00 p.m. to 8:00 p.m., we continued to surprise and delight guests with a selection of passed hors d’oeuvres. While we kept the precise menu under wraps to build anticipation, each bite was meticulously crafted to harmonize with the artistic ambiance of the event. Our culinary team focused on creating gourmet bites that were not only delicious but also visually stunning, enhancing the overall sensory experience.

Interactive Culinary Stations

 

One of the highlights of the evening was our mozzarella caprese station, where our chefs hand-crafted fresh mozzarella cheese on-site. Guests enjoyed this freshly made mozzarella paired with heirloom tomatoes, basil pesto, balsamic vinegar, and toasted crostini. This live culinary demonstration showcased our commitment to freshness and quality.

 

Another crowd favorite was our cheese wheel station, where a wheel of parmesan cheese was set ablaze, melting to perfection before being paired with cheese tortellini in a truffle cream sauce. This dramatic presentation added an element of theatricality to the culinary experience, captivating guests and leaving a lasting impression.

Sweet and Savory Finishes

 

As the evening progressed, we introduced additional stations to keep the culinary excitement flowing. Our donut flambé station offered a decadent treat, while our iced coffee station provided a refreshing interlude. To ensure a sweet ending, we added dessert macarons to the selection of passed hors d’oeuvres at 7:00 p.m., providing a delightful conclusion to the culinary journey.

A Celebration of Creativity and Community

 

The success of “Revival” was not just about the art and fashion; it was also a philanthropic endeavor supporting the Arkansas Chapter of the Cystic Fibrosis Foundation. We were proud to contribute to this meaningful cause, underscoring our commitment to community and excellence.

The enchanting ambiance of the event was further enhanced by the artistic contributions of our fellow vendors. Tanarah Luxe Floral adorned the venue with their exquisite floral arrangements, adding vibrant bursts of color and natural beauty that complemented the event’s theme perfectly.

Bar services provided by Have Bar Will Travel kept guests refreshed throughout the evening, while beverages from De Nux Distributor and So Restaurant + Bar added a touch of sophistication and variety to the event’s drink offerings.

Lori Sparkman Photography captured the essence of the evening, creating a visual narrative that captured the glamour and artistic flair of “Revival.” Meanwhile, Meredith Events expertly planned and coordinated every detail, ensuring a seamless and memorable experience for all attendees.

Central Arkansas Entertainment and DJ JellyBean set the mood with vibrant music and modern production elements, while Mack 365 Designs provided elegant rentals that enhanced the event’s aesthetic appeal.

Weaver Films documented the entire evening on film, preserving its magic and creating a lasting record of this extraordinary celebration of art, fashion, and community in Little Rock.

Vibrant Occasions was thrilled to be a part of this wonderful event, showcasing our culinary delights and connecting with future brides and grooms.

The Venue at Oakdale, known for its elegant reception hall and charming chapel, opened its doors to guests eager to explore wedding possibilities. The fair provided an excellent opportunity for engaged couples to interact with some of the best vendors in the state. It was a day filled with delicious food, refreshing drinks, and delightful conversations.

At Vibrant Occasions, we love creating memorable experiences, and the Bridal Fair was no exception. We greeted engaged couples with our signature Caramel Kissed Crunchies, presented in custom pink and white striped popcorn buckets. These charming mini tubs, reminiscent of classic movie theater popcorn containers, were a huge hit. They added a whimsical touch to our booth and were the perfect snack for guests to enjoy as they strolled through the event.

Hey there, foodies and philanthropists! If you missed out on the glitz, glamour, and gourmet delights of the Wolfe Street Foundation’s Red Carpet Recovery Gala 2024, don’t worry because we’ve got the juicy details right here for you!

Hosted last month at The Venue at Westwind in Maumelle, the Red Carpet Recovery Gala was a night to remember. As the exclusive caterer for the event, Vibrant Occasions Catering served up a feast fit for royalty. From mouth-watering appetizers to decadent desserts, our culinary team pulled out all the stops to ensure guests experienced an unforgettable dining experience.

But the gala wasn’t just about fabulous food—it was also about giving back and supporting a noble cause. Proceeds from the event directly supported the vital mission of the Wolfe Street Foundation, an addiction recovery group based in Little Rock. With services ranging from support groups to recovery housing, the foundation is committed to helping individuals on their journey to recovery.

 

The evening was made even more memorable with the presence of keynote speaker, former Razorback and Dallas Cowboy, Darren McFadden. Guests had the opportunity to mingle with McFadden, snap photos, and even snag autographs from the legendary athlete.

Throughout the night, attendees indulged in premium mocktails, bid on exclusive items in live and silent auctions, and were inspired by stories of recovery shared by individuals whose lives have been touched by the Wolfe Street Foundation.

 

Chef Serge Krikorian of Vibrant Occasions summed it up best: “It was an honor to be part of such a meaningful event. Supporting the Wolfe Street Foundation’s mission and contributing to the community is what it’s all about.”

Although the gala has come to a close, the impact of the event lives on. It’s moments like these that remind us of the power of coming together to make a difference in the lives of others.

 

But wait, let’s not forget about the culinary masterpiece that graced the tables of the Red Carpet Recovery Gala! Let’s take a delicious stroll down memory lane and revisit the mouthwatering menu that stole the show.

The culinary extravaganza kicked off with an irresistible starter—Caribbean Citrus Chicken. Picture tender chicken breast draped in a vibrant mango salsa, perfectly capturing the essence of tropical indulgence.

 

Next up, the Wild Rice Pilaf stole the spotlight with its rich blend of flavors. Fresh sautéed mushrooms, celery, and parsley seasoned a wild rice medley, creating a savory symphony that delighted every palate.

 

But the real star of the evening? Roasted Broccolini. Lightly seasoned and roasted to perfection with extra virgin olive oil, this side dish was a true crowd-pleaser, adding a touch of elegance to every plate.

And who could resist the indulgent allure of Westrock Coffee Mocha Crème Brûlée? Dark roast coffee infused cream meets creamy milk chocolate in a dessert that’s simply divine.

For our vegan and vegetarian friends, we had a culinary masterpiece in store. The Stuffed Acorn Squash featured P. Allen Smith’s Ralston Farms‘ Harvest Blend Rice, paired with fresh sautéed vegetables, chickpeas, spinach, peppers, and corn, all nestled inside a roasted acorn squash and drizzled with a vegan cucumber aioli. A dish so flavorful, even the most discerning palates couldn’t resist.

As we reflect on the evening’s menu, it’s clear that each dish was carefully crafted to delight and inspire. From the vibrant flavors of the Caribbean to the comforting warmth of home-baked rolls, every bite was a testament to the culinary expertise of Vibrant Occasions Catering.

Alongside hosts Ashley King and Adam Bledsoe, Chef Serge demonstrated the artistry behind this exquisite dish, sharing insights and tips to elevate home cooking to gourmet heights.

 

Inspiration

Lamb has long been a centerpiece of many culinary traditions, from Mediterranean feasts to elegant dinners. However, Chef Serge’s rendition adds a contemporary twist with the addition of a pistachio crust, enhancing both flavor and presentation. This dish seamlessly marries the tender juiciness of lamb with the nutty crunch of pistachios, resulting in a harmonious symphony of taste.

What sets Chef Serge’s recipe apart is the meticulous attention to detail in every step. The process begins with a perfectly seasoned rack of lamb, seared to golden perfection in a cast-iron skillet. Pistachio-Crusted Lamb Chops Recipe

 

Ingredients

1 lbs rack of lamb
1/2 tsp Salt
1/2 tsp Pepper
2 tsp Canola Oil
1 Tbls Butter
3 Garlic Cloves
1/2 tsp Thyme (3 to 4 stems)
1/2 tsp Tarragon (2 to 3 stems)
1/2 Cup Panko Bread Crumbs
1/2 Cup Pistachios
1/2 tsp Salt
1/2 tsp Pepper
3 Tbls Dijon Mustard (or your favorite mustard)

 

Instructions

Salt and Pepper lamb chops before searing in a cast iron skillet.

 

Heat the skillet to a medium high heat, and put a generous amount of oil in the pan. Place the lamb chops back side down and leave for three minutes. (You’re not trying to cook it here, only trying to melt the fat and give the meat a good color.) Place butter and garlic cloves in the pan along with fresh thyme and tarragon. Make sure the stems are in the melted butter, so the aromatics can be infused. Rotate the lamb chops to allow all sides to become a golden color (about three minutes). As you are rotating, baste the lamb with the butter in the skillet. Once all sides have been seared, take the lamb out of the skillet.

 

Preheat the oven to 325 degrees. Place the panko bread crumbs in the food processors to make them finer, and do the same for the pistachios. Combine the finely chopped pistachios and bread crumbs on a plate and mix in salt and pepper. Coat the lamb liberally with mustard to help create a crust. (The mustard will not overpower the other flavors. You likely won’t be able to tell it’s there.) Roll the lamb in the pistachio crust mixture until evenly coated on all sides. Place the crusted lamb chops on a sheet pan and in the oven for 10 to 15 minutes. The thermometer should read 135 degrees for a medium cooked lamb chop. For medium rare, it should read between 125-135 degrees. If you want it a little more done, cook it for a few minutes longer. The most important thing is to let the meat rest once it is out of the oven. Once the meat has had time to rest, cut the meat parallel to the bone. Serve

 

Creamy Asparagus Risotto Recipe

 

Ingredients

1 lbs. asparagus, woody stems removed, tips cut off and reserved

6 cups chicken stock or canned low-sodium broth

2 Tbls. butter

1 medium shallot, minced

1 garlic clove, minced

1 cup arborio rice 

1/2 cup dry white wine

3 Tbls. unsalted butter

1 cup freshly grated Parmesan cheese

Salt, to taste

Freshly ground pepper, to taste

 

Instructions

In a large pot, bring chicken stock to a boil.

 

Meanwhile, melt butter in a large skillet.  Add minced shallot and cook until it starts to turn translucent about 2 minutes.  Add minced garlic and cook for 1 more minute.

 

Stir in arborio rice and continue to cook to toast the rice, about 3-4 minutes.

 

Add white wine and continue to cook and stir until liquid is absorbed.  Add chicken stock ½ cup at a time and cook and stir after each addition of liquid until liquid is absorbed before adding more liquid.

 

Meanwhile, remove the woody ends from the asparagus spears and snip off the tips, reserving the tips.  Break the steams into 1.5” – 2” pieces and put in boiling chicken stock.  Cook until tender, about 5 minutes.  Remove the asparagus from the stock and put in a blender with about ½ cup of the cooking stock and puree until smooth.

 

Add the tips to the boiling stock and cook 2-3 minutes.  Remove from stock and set aside.

 

Meanwhile, back to the risotto, add the asparagus puree to the risotto as one of the additions of liquid and cook until liquid is absorbed.  Continue to add the liquid to the risotto until it is cooked through and soft to the bite, not crunchy.  Stir in the 3 Tbls. of butter and shredded Parmesan cheese.  Season with salt and pepper.  Add reserved asparagus tips before serving.
