When Hannah and Justin Messer envisioned their perfect wedding day, they dreamed of an elegant celebration in a light, airy space that could be transformed into a personalized canvas for their love story. As their chosen caterer, we at Vibrant Occasions had the privilege of witnessing their vision come to life while providing a memorable culinary experience for their guests. Today, we’re sharing this beautiful celebration from our unique perspective at the heart of their reception.

A Louisiana Love Story in an Arkansas Setting

Hannah and Justin’s journey began at Louisiana Tech University in Ruston, LA, during Hannah’s freshman year. “I will forever be thankful for sweet Ruston for bringing me my forever,” Hannah shared with us. Their connection, which started in college, eventually led them to choose The Grandeur House in Arkansas for their wedding celebration.

Hannah discovered their venue through Instagram (a thoroughly modern beginning to their traditional celebration). “I kept talking to my family and friends about how I was having so much trouble finding an Arkansas venue that met my personal style,” Hannah explained. “I very much wanted a light, airy, blank canvas that I could make my own with my chosen colors.” The Grandeur House, with its stunning open floor plan, provided exactly that…a beautiful backdrop that allowed their design team to create a space uniquely reflective of the couple.

A Day of Culinary Delight

As caterers, our perspective on wedding days is unique as we witness the careful orchestration behind the scenes while also sharing in the joy of the celebration. For Hannah and Justin’s wedding, we worked closely with their planner, Delia Jeffcoat Events, to ensure that the culinary experience matched the elegance of the overall design.

“Our food, thanks to Mrs. Mary and her incredible staff, checked every box and then some,” Hannah told us afterward. “Every bite was decadent and filled with so much flavor. There was not a person in the room that let how wonderful their meal was go unnoticed!”

The menu we crafted featured elevated southern cuisine with sophisticated presentation, perfectly complementing the elegant aesthetic of the day while providing comforting, familiar flavors. Guests were treated to passed hors d’oeuvres during cocktail hour while the wedding party finished photos, followed by a seated dinner service that allowed everyone to relax and truly savor the experience.

A Family Celebration

What made this wedding particularly special was the presence of Hannah and Justin’s daughter, who participated as their flower girl. “Although she started out very unsure of the whole flower girl concept, the dance floor made up for all of her troubles and oh how she danced the night away!” Hannah shared. “Seeing our day through her eyes made it that much more special for us.”

Thoughtful Details

The design created by Brianna Belton Design transformed The Grandeur House into a romantic dream, with soft florals in blush and cream tones accented with touches of gold throughout the space. The stunning installation above the head table created a focal point that drew every eye in the room.

As the culinary team, we worked to ensure our presentation complemented these design elements. From carefully styled appetizers to beautifully plated main courses, every culinary touch was designed to enhance the overall aesthetic while delighting the palate.

One particularly enchanting element was the champagne bar by Champagne Charlie’s Bubble Bar, which served as both a beautiful display and a functional beverage station. Paired with a cotton candy stand from Lemon and Puff for late-night treats, these special touches created memorable moments throughout the evening.

An Unforgettable Send-Off

As the evening drew to a close and guests lined up for the couple’s departure, our team was busy behind the scenes preparing their final surprise—gourmet to-go boxes for the newlyweds to enjoy later that night. After all, many couples are so busy during their reception that they barely get to taste the food they’ve selected!

Hannah and Justin made their exit in a classic car from Arkansas Destinations, surrounded by the glow of sparklers and cold spark fountains from Central Arkansas Entertainment. It was a magical ending to a day that, as Hannah described, was “nothing short of remarkable and unforgettable.”

At Vibrant Occasions Catering, we believe that great food has the power to bring people together for meaningful causes. On April 10, 2025, we had the honor of partnering with Chef Matt Fuller of 501 Prime for “Sip, Savor, and Support at The Hill,” an elegant fundraising gala benefiting the Cooper-Anthony Mercy Child Advocacy Center (CAMCAC).

A Culinary Collaboration for a Cause

When we were approached about participating in this special event, our team, led by Chef Serge Krikorian, immediately recognized the importance of CAMCAC’s mission. As the only hospital-based child advocacy center in Arkansas, CAMCAC provides critical services to more than 800 clients annually across a four-county area, offering forensic interviews, medical exams, child advocacy, mental health services, and prevention programs—all free of charge.

“We are honored to support such a vital organization in our community,” said Chef Serge. “By donating a portion of our services for this special evening, we hope to help CAMCAC continue their mission of providing hope, healing, and justice to child abuse survivors.”

For this exceptional evening, Chef Serge collaborated with Chef Matt Fuller of 501 Prime in Hot Springs to create a wine pairing menu that would elevate the fundraising experience. The result was a sophisticated five-course feast that showcased both chefs’ talents while complementing a carefully selected wine progression.

The culinary journey began with fig and brie bruschetta paired with Mionetto Prosecco—a light, effervescent start to the evening that delighted guests as they arrived at the beautiful Hill Barn Event Center in Bryant.

The second course featured innovative tuna tartar tacos, their fresh flavor profile enhanced by Joel Gott Pinot Gris. These delicate hand-held appetizers demonstrated our team’s commitment to combining sophisticated flavors with approachable presentation.

Perhaps the most dramatic moment of the evening came with the third course: pasta alla vodka cream sauce prepared tableside in a Parmesan wheel. As our team flambéed the cheese wheel, creating a spectacle of dancing flames, guests were treated to both dinner and a show. This course, paired with Jam Cellars Chardonnay, exemplified how food can create memorable moments that enhance a fundraising event.

The fourth course featured a pork belly “chirashi” bowl, demonstrating our ability to incorporate international culinary influences. The rich, tender pork belly contrasted beautifully with the fresh components of the dish, while La Crema Pinot Noir provided the perfect accompaniment.

For the final savory course, guests enjoyed red wine braised boneless beef short ribs over horseradish mashed potatoes, paired with Robert Mondavi Private Selection Cabernet Sauvignon. This comfort food classic, elevated through expert technique and quality ingredients, brought the culinary experience to a satisfying conclusion.

Our Executive Chef Serge Krikorian returned to THV11’s The Vine recently, continuing his regular series of cooking demonstrations but this time with a special guest and an important cause to highlight. Chef Serge was joined by Holly from the Cooper-Anthony Mercy Child Advocacy Center (CAMCAC) to not only share a delicious recipe but also to raise awareness for the “Sip, Savor, & Support” charity gala.

A Pasta Dish with Italian Heritage

For this segment, Chef Serge demonstrated how to prepare a classic Pasta alla Vodka – a rich, creamy pasta sauce that originated in Italy in the 1970s. This iconic sauce has become a staple in Italian-American cuisine, beloved for its perfect balance of tangy tomatoes, silky cream, and the subtle depth that vodka brings to the flavor profile.

“What I love about vodka sauce is how it transforms simple ingredients into something truly special,” Chef Serge explains. “The vodka doesn’t add an alcohol flavor (as one might assume) but instead it actually acts as an emulsifier that helps the tomatoes and cream blend together perfectly, while also releasing flavors that would otherwise remain dormant.”

Vodka sauce is versatile enough for both casual family dinners and more sophisticated gatherings. At Vibrant Occasions, we’ve served variations of this sauce at everything from intimate dinner parties to elegant wedding receptions.

Amazing Vodka Sauce Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup vodka
  • 1 (28-ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • Linguini or pasta of your choice

Directions:

  1. Sauté the Aromatics: In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion and cook until soft and translucent, about 5 minutes. Add the garlic and red pepper flakes (if using) and cook for another minute, until fragrant.
  2. Deglaze with Vodka: Slowly pour in the vodka, stirring to deglaze the pan and pick up any flavorful bits. Let the vodka cook off for about 2-3 minutes until it’s mostly evaporated.
  3. Tomatoes: Add the crushed tomatoes to the pan and stir to combine. Lower the heat and let it simmer for about 20 minutes, allowing the flavors to meld.
  4. Creamy Finish: Stir in the heavy cream, and let it cook for another 5-10 minutes. The sauce will turn a beautiful, rich pink color. Taste and adjust with salt and pepper as needed.
  5. Cheesy Goodness: Stir in the Parmesan cheese until melted and incorporated into the sauce. This will add depth and an extra creamy texture.
  6. Garnish: Remove from heat and sprinkle fresh basil on top.
  7. Serve: Toss the sauce with your cooked pasta, making sure to coat it thoroughly. Serve with extra Parmesan cheese on the side.

  • Don’t rush cooking off the vodka – you want the alcohol to evaporate while leaving behind the flavor compounds that enhance the sauce.

  • The sauce should simmer gently – a hard boil can cause the cream to separate.

When the stars align, magic happens and for Levi and Sabrina, this wasn’t just a romantic saying but the literal backdrop for their special day. At Vibrant Occasions Catering, we’ve helped create countless memorable celebrations, and having the opportunity to cater a wedding during such a rare celestial event as a solar eclipse made this day particularly special.

An Eclipse-Inspired Garden Party

Levi and Sabrina’s wedding at Cross Iron Cottage in Malvern, Arkansas was timed perfectly with the April 2024 solar eclipse. What began as a lighthearted pact during the 2017 eclipse (“If we’re still together when the next one comes around, let’s get married!”) transformed into a charming celestial-themed celebration that perfectly captured their playful spirits.

The couple envisioned a relaxed garden party atmosphere with a brunch-inspired feel, exactly the kind of creative culinary challenge we love. Their venue, Cross Iron Cottage, provided the perfect backdrop with its rustic charm and gorgeous outdoor spaces for guests to enjoy lawn games and celebrate under the changing sky.

What made this wedding particularly special for our culinary team was the opportunity to work with beef from the groom’s family farm, Flying C Ranch. Our chefs crafted a mouthwatering Bulgogi Brisket using this locally-sourced beef, creating a dish that literally brought a piece of Levi’s heritage to the celebration.

There’s something magical about a couple who chooses to return to the place where their love story began. For Lindsey and John David, Northwest Arkansas represented the backdrop where they formed “a sincere friendship, prayerfully pursued each other into dating, and eventually fell in love.” Despite both relocating to Texas, they decided that NWA would be the perfect place to begin their lives as husband and wife.

A Celebration That Honors Relationships

When planning their wedding at The Barn at the Springs, Lindsey and John David established two main priorities: to honor the commitment and covenant they were entering into, and to show gratitude to their loved ones who helped shape them into the people they are today.

 

“Our heart’s desire was that our vows would be a reflection of the sacrificial love of Jesus Christ—a firm foundation for us to build our marriage upon,” Lindsey shared. With these intentions guiding every decision, their celebration unfolded as a day filled with emotional moments, thoughtful details, and, of course, exceptional food.

An Unforgettable Culinary Experience

For both families, sharing good food has always been highly valued, making catering one of their biggest priorities when wedding planning. Working closely with Mary at Vibrant Occasions Catering, they crafted a menu that would keep guests satisfied throughout the entire celebration.

“A good meal is something highly valued in both of our families, and so we knew from the beginning that catering was going to be one of our biggest priorities when wedding planning,” explained Lindsey.

 

With a large wedding party and numerous family photos to coordinate, the couple worried about guests waiting during photography sessions. Vibrant Occasions created the perfect solution: an elegant selection of passed hors d’oeuvres and a lively street taco bar that kept everyone well-fed and entertained during the interim between ceremony and reception.

 

For the main reception, they opted for a station-style dinner setup with various cuisine genres, ensuring options for every taste preference. The evening culminated with a crowd-pleasing late-night snack of individual chicken and waffles that reenergized guests for more dancing.

“To this day, we still hear from our wedding guests about how much they loved the food!” Lindsey remarked.

 

One of the couple’s favorite wedding weekend memories came after the celebration ended. The thoughtful Vibrant Occasions staff had prepared a special bag of leftovers containing samples of each appetizer, dinner entrée, and even the late-night chicken and waffles. This allowed the newlyweds to truly savor each delicious bite during the first days of their honeymoon.

 

“We were able to eat on these delicious samplings for the rest of the weekend, and take the time to truly savor each bite. Leftovers have never tasted so good in all of history!” Lindsey recalled.

Art Deco Elegance with Personal Touches

Working with Taylor Hight of Amanda Reed Weddings, the couple transformed The Barn at the Springs into a stunning vision of “moody jewel tones and Art Deco elegance, with little touches of whimsy sprinkled all around.” Darling Blooms provided gorgeous floral arrangements that complemented the venue’s natural beauty.

 

“I walked out of the bridal suite and saw the reception hall… It was so much more beautiful than I could have ever imagined,” said Lindsey.

 

Personal touches abounded throughout the celebration. The couple incorporated a custom Art Deco poster, neon signage, and even life-sized cutouts of their beloved dogs, Watson and Achilles, who couldn’t attend in person.

“For 9 months, without any of our friends or family knowing, we learned the fundamentals of Country Western Waltz, Two-Step, Rumba, and Swing (with a little TikTok thrown in for good measure),” Lindsey shared.

 

After beginning with traditional slow dancing, a record scratch interrupted the music, and the couple launched into an impressive choreographed routine featuring multiple dance styles and song changes. The surprise delighted guests and represented both their individual roots and their shared future.

When Lauren and Christian’s paths crossed during the early days of the pandemic at a local market, little did they know their grocery store encounters would blossom into a beautiful love story. A few short years later, following a heartfelt proposal at Garvan Gardens, they celebrated their union at Arkansas’s P. Allen Smith’s stunning Moss Mountain Farm, where our team at Vibrant Occasions Catering had the honor of creating their dream wedding menu.

A Pasta-Perfect Reception

“We are huge pasta fans, and so we thought it would be perfect for our wedding,” Lauren shared about their menu selection. Taking their love for Italian cuisine to heart, we crafted a menu that balanced sophistication with comfort. During cocktail hour, guests enjoyed our signature Cajun shrimp shooters, Asian meatballs, and sausage cheddar stuffed mushrooms, which Lauren described as “literally amazing, and the presentation was beautiful.”

Main Course Magic

The dinner service featured two show-stopping pasta dishes: a grilled chicken alfredo that showcased perfectly grilled chicken in our signature creamy parmesan sauce, alongside a hearty pasta ragu featuring cabernet-braised shredded beef and Italian sausage in San Marzano marinara. These were complemented by a vibrant medley of garden vegetables, creating a feast worthy of their fairytale garden party theme.

Sweet Finale

The evening’s culinary highlights culminated with our bananas foster action station, where guests gathered to watch the theatrical preparation of this classic dessert. The flambéed bananas, caramel sauce, and vanilla ice cream provided the perfect complement to their five-tiered wedding cake by Sweets by Logan.

The burgundy and blush color palette perfectly matched the romantic garden party atmosphere at Moss Mountain Farm. Elevated Cocktail Hour

Working alongside Central Arkansas-based wedding planner Katie Gill, we designed a cocktail reception that would complement both the vineyard setting and the couple’s refined taste. Guests enjoyed our signature Caprese pipettes, an interactive appetizer featuring fresh mozzarella, heirloom tomato, and aged balsamic. We elevated classic comfort foods with spicy kielbasa wrapped in puff pastry, while Cajun shrimp shooters added a touch of Southern sophistication to the wedding celebration.

A Menu Worth Celebrating

For the main course buffet, our catering team prepared two showstopping entrées: Cabernet-braised prime black angus brisket and blackened chicken breast with Cajun cream sauce. The wine-braised brisket particularly complemented the vineyard setting, while the blackened chicken offered a nod to Southern culinary traditions that wedding guests love.

The Perfect Setting

The October celebration at Little Rock’s Rusty Tractor Vineyards created a magical atmosphere, enhanced by personal touches throughout. The mother-of-the-bride’s stunning floral arrangements and live music by the Big John Miller Band set the perfect tone, while Sweet Lavender Bake Shop created two distinctive cakes – a carrot cake for the groom and a strawberry cake with champagne icing for the bride – that perfectly complemented our catering menu.

The studio was filled with laughter and delicious aromas as Chef Serge demonstrated how to prepare his famous “Marry Me Chicken” and “Wedding Cake Crème Brûlée,” two show-stopping recipes perfect for creating an unforgettable Valentine’s dinner at home.

The Recipes

 

Marry Me Chicken

 

Yields: 4 servings

Description: Pan-seared chicken breast draped in a creamy sauce made with fresh garlic, sautéed mushrooms, sun-dried tomatoes, and artichoke hearts.

 

Ingredients:

  • 4 (6-8 oz) boneless, skinless chicken breasts, cleaned
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 cup flour
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 oz whole mushrooms, sliced and sautéed
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • ½ cup chicken stock
  • 1 cup heavy cream
  • ½ tsp crushed red pepper flakes
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • ½ can (7 oz) artichoke hearts, chopped
  • ¼ cup sun-dried tomatoes, chopped
  • ½ cup shredded Asiago cheese
  • 1 tbsp fresh basil, chopped

 

Method:

  1. Place the chicken between two pieces of plastic wrap. Using a mallet, carefully pound the chicken until it is evenly flattened.
  2. Season the chicken breasts with salt and black pepper. Dredge in flour, shaking off any excess.
  3. In a large skillet over medium heat, heat the olive oil and melt the butter. Swirl to coat the pan evenly.
  4. Sear the chicken breasts for 4-5 minutes per side, or until golden brown and cooked through to 165 degrees.
  5. In the same skillet, sauté the mushrooms until soft. Add the minced garlic and cook for about 1 minute, until fragrant.
  6. Deglaze the pan with white wine, scraping up any browned bits with a wooden spoon.
  7. Stir in the chicken stock, then reduce the heat to medium-low. Add the heavy cream, chopped artichoke hearts, chopped sundried tomatoes, and Asiago cheese. Stir until the cheese melts and the sauce begins to thicken.
  8. Season the sauce with crushed red pepper flakes, thyme, oregano, salt, and black pepper to taste. Stir in the sun-dried tomatoes.
  9. Let the sauce simmer for a few minutes until it reaches your desired thickness. Use a slurry if needed.
  10. Spoon the sauce over the chicken and garnish with fresh basil.

Wedding Cake Crème Brûlée

 

Yield: 7 servings

Description: A rich, creamy baked custard with the nostalgic flavor of fresh wedding cake, finished with a perfectly caramelized sugar crust.

 

Ingredients:

  • 2 cups heavy cream
  • 1 tbsp cake batter flavoring
  • 1 tsp butter flavoring
  • 2 tsp vanilla extract
  • 7 tbsp granulated sugar (plus extra for topping)
  • 6 eggs

 

Directions:

  1. Preheat the oven to 300°F.
  2. In a saucepan, heat the heavy cream with the cake batter flavoring, butter flavoring, and vanilla extract until hot but not boiling.
  3. In a separate bowl, whisk together the eggs and sugar until smooth.
  4. Temper the eggs: Slowly pour about ⅓ of the heated cream into the egg mixture, whisking constantly to prevent scrambling. Once combined, gradually whisk in the remaining cream.
  5. Strain the mixture for a silky-smooth custard, then divide it evenly into 7 ramekins.
  6. Place the ramekins in a deep baking dish or hotel pan. Fill the dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath for even baking.
  7. Bake for 40 minutes, or until the custard is just set with a slight jiggle in the center.
  8. Carefully remove the ramekins from the water bath and let them cool completely. Refrigerate for at least 2 hours before serving.
  9. Finishing Touch: Sprinkle a thin, even layer of sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden and crisp. Let the sugar harden for a minute before serving.
