A refreshing start to the meal, this garden salad was served with a house vinaigrette dressing that enhanced the vibrant flavors of fresh greens and crunchy vegetables.

Second Course: Grilled Mediterranean Steak Kebabs & Mediterranean Chicken Kebabs
Tender steak and marinated chicken breast, both skewered and grilled to perfection over an open flame. The blend of sliced onions, tomato paste, garlic, oregano, and fresh cilantro infused these kebabs with a mouthwatering Mediterranean flair.
Accompaniments:
Roasted Fingerling Potatoes – Baby reds, yellow, and purple fingerling potatoes drizzled with extra virgin olive oil and lightly seasoned, creating a crispy and flavorful side dish.
Roasted Broccoli – Fresh broccoli florets carefully roasted to perfection, resulting in charred bits around the edges that added depth and richness to every bite.

Vegan Entree Option: Stuffed Acorn Squash
A vegan delight that showcased Vibrant Occasions Catering’s commitment to inclusivity. This dish featured P. Allen Smith’s Ralston Farms’ Harvest Blend Rice combined with sauteed vegetables like chickpeas, spinach, peppers, and corn, along with dried cranberries and toasted walnuts. Beef Tenderloin with Truffle Cream Sauce
The succulent Beef Tenderloin, also known as Filet Mignon, has been cherished for centuries as one of the most tender and flavorful cuts of beef. Its roots trace back to medieval times when it was reserved for nobles due to its exceptional taste and tenderness. Fast forward to today, and it remains a beloved indulgence among food enthusiasts.
1 Lb. Beef Tenderloin
1 Tsp. Kosher Salt
1/2 tsp. Ground Black Pepper
2 Tbls. Unsalted Butter
1 Tbls. Extra Virgin Olive Oil
2 Whole Garlic Clove
3 to 4 Sprigs of Fresh Thyme
Preheat oven to 325 degrees.
Season the tenderloin with salt and pepper. In a heavy cast iron skillet, heat the oil. Sear the meat on all sides. Add the butter, garlic, and thyme, and baste the tenderloin with the butter. Place the meat in the oven and baste every 3-4 minutes until the internal temperature reaches 135 degrees. This generally takes 7-10 minutes.
Sauce:
1 Cups Heavy Cream
1 Tsp. Black Truffle Oil
1/4 Cups Shredded Asiago Cheese
Kosher Salt, to taste
2 tsp. Unsalted Butter
Directions:
In a small saucepan over medium heat, add heavy cream and truffle oil and whisk to combine. Add shredded asiago and Kosher salt to taste and simmer (do not boil) until sauce is reduced and thickened. To finish, stir in 2 tsp. unsalted butter.
Roasted Nutmeg Fingerling Potatoes
Incorporating aromatic spices and heirloom gold potatoes, the Roasted Nutmeg Fingerling Potatoes elevate this meal to new heights. The history of using nutmeg dates back to ancient times when it was considered a precious spice with medicinal properties. Today, it continues to add warmth and depth to dishes, creating a delightful and comforting flavor profile.
4 Tbls. Unsalted Butter
3/4 Tsp. Ground Nutmeg
1 Tsp. Kosher Salt
1 1/2 Tsp. Minced Garlic
1/2 Tsp. Ground Black Pepper
1 Lb. Heirloom Gold Potatoes
Preheat oven to 350 degrees.
Place the fingerling potatoes in a pot of water and bring to a rolling boil . Cook until potatoes just start to soften but not too soft. Drain and set aside.
Meanwhile, melt the butter and add the nutmeg, garlic, salt and pepper and simmer for one minute.
Coat the potatoes in the butter mixture and spread out on a sheet pan in a single layer.
Cook potatoes in the oven until they are cooked through, about 25-30 minutes.
Pan-Grilled Asparagus
Adding a burst of vibrant color and freshness to our meal, the Pan-Grilled Asparagus brings a touch of elegance. Asparagus has been cultivated and enjoyed for thousands of years, dating back to ancient Egypt, Greece, and Rome. With its unique flavor and exceptional nutritional value, it has stood the test of time as a beloved vegetable.
1 Bunch Fresh Asparagus
Kosher Salt, to taste
Ground Black Pepper, to taste
Extra Virgin Olive Oil
Zest of 1 Lemon
Crushed Red Pepper Flakes (optional)
Bring a pot of water to boil and salt heavily (like ocean water).
Snap off the woody ends of the asparagus. Drop your asparagus into the boiling for approximately 3 minutes.
Meanwhile, prepare an ice bath in a bowl with ice and water.
Drop the asparagus in the ice water to cool down quickly. Drain and pat dry with a paper towel.
Rub the asparagus with the olive oil and season with salt and pepper.
Pre-heat a grill pan over high heat. Grill the asparagus for 2 minutes, turn over, and grill for another 2 minutes.
Transfer the asparagus to a serving platter and sprinkle with lemon zest and red pepper flakes.

Brazilian Skirt Steak with Chimichurri Sauce
Our first stop takes us to Brazil, where the love for grilled meat runs deep. Skirt steak, known for its robust flavor and tenderness, is a staple in Brazilian cuisine. Traditionally marinated in simple yet flavorful ingredients, it absorbs the essence of the chimichurri sauce, enhancing its taste.
Chimichurri sauce, originating from Argentina, is a vibrant concoction of parsley, garlic, oregano, red chili pepper, and red wine vinegar. Its bright and herbaceous profile complements the rich flavors of the steak. As the thinly sliced skirt steak hits the grill, the fragrance of the chimichurri-infused meat tantalizes the senses, creating a mouthwatering experience.
For the Steak:
2.5 Lbs. Skirt Steak, cleaned
Chimichurri Sauce (recipe follows)
Rub half of the chimichurri skirt steak and refrigerate at least 4 hours, preferably overnight.
Preheat your grill to 400-450 degrees. Place your steak 4-6 minutes per side, until it’s internal temperature reaches 145 degrees.
Let the steak rest for 5 minutes and then slice against the grain. Serve topped with the remainder of the chimichurri sauce
For Chimichurri Sauce:
1.5 Cup Fresh Parsley, stemmed
2 Tbls. of Fresh Garlic, minced
1/4 Cup Fresh Oregano, chopped
1 Tsp. Red Chili Pepper (adjust to taste)
1 Tsp. Kosher Salt
1/2 Tsp. Ground Black Pepper
3 Tbsp. Red Wine Vinegar
1/3 Cup Olive Oil
1 Tsp. Fresh Mint, chopped
Combine everything in a food processor. Blend until chopped and combined.
Mexican Street Corn
Next, we venture into the bustling streets of Mexico, where the vibrant culture comes alive through its street food. Mexican Street Corn, or “Elote,” is a beloved classic found on street corners throughout the country. This dish showcases the delectable combination of sweet corn cob, creamy mayo, tangy cotija cheese, and smoky spices.
The corn is grilled to perfection, allowing the natural sweetness to caramelize and intensify. Slathered with garlic mayonnaise, it provides a luscious contrast to the salty crumbles of cotija cheese. Finally, a sprinkle of cilantro and chili powder adds freshness and a kick of heat, creating a symphony of flavors that will transport your taste buds to the vibrant streets of Mexico.
4 Ears Sweet Corn on the Cob
2 Tbls. Unsalted Butter, softened
1 Tsp. Kosher Salt
1/2 Tsp. Ground Black Pepper
3 Tbls. Mayonnaise
1/4 Tsp. Garlic Powder
1/2 Cup Cotija Cheese, crumbled
3 Tbls. Fresh Cilantro, chopped
1/2 Tsp. Chipotle Chili Powder (ancho chile powder works too)
1 Lime, quartered
Peel the corn leaving the husks attached and removing the silk.
Combine the softened butter, salt, and black pepper
Rub the butter mixture over the corn and then re-wrap the corn with the attached husks. Wrap each ear with foil, poking the foil with a fork a couple of times to create vent holes. Place the corn on the pre heated gill for 20 minutes, turning occasionally, until the corn is cooked.
Meanwhile, in a small bowl combine the garlic powder with the mayonnaise. Place the cotija cheese in a shallow baking dish or on a plate.
When the corn is done, remove husks and brush the corn with the garlic mayonnaise. Roll each cob in the cotija cheese and sprinkle with cilantro and chili powder.
Serve with the lime wedges to squeeze over the corn.
Grilled Skillet Potatoes
As we conclude our culinary adventure, we find ourselves savoring the irresistible appeal of Grilled Skillet Potatoes. This dish draws inspiration from the rustic comfort food found across Latin America. With its tender Yukon gold potatoes, infused with a medley of spices like garlic, chili powder, and cumin, this side dish brings a satisfying depth of flavor.
The cast-iron skillet on the grill ensures the potatoes become crispy on the outside while remaining soft and fluffy on the inside. Each perfectly seasoned bite offers a symphony of smoky, savory, and slightly spicy notes. 2 lbs Yukon gold potatoes, sliced into 1/2” rounds
2 Tbls. Grapeseed Oil
1 tsp. Kosher Salt
1/2 tsp. Ground Black Pepper
1 tsp. Garlic Powder
1/2 tsp. Chili Powder
1/2 tsp. Ground Cumin
Preheat the grill to medium-high, about 400-450° F.
Put the sliced potatoes in a bowl and toss with oil and and all the seasonings until evenly coated
Place a cast-iron skillet or grill basket on the grill to preheat then transfer the potatoes to the skillet. Grill over direct heat for 15-20 minutes or so, being sure to stir the potatoes to brown them on all sides. Then move to the indirect side for about 10 more minutes, or until the potatoes are golden and cooked through.

This prestigious event will be held on Thursday, November 9, 2023, from 6:00-9:00 p.m. at Chenal Event Venue in Little Rock, AR. The Sandra Wilson Cherry Award, named after the late Sandra Cherry, has been established to recognize exceptional women who have excelled in their careers and community service. This year, Gaines House has chosen Kathy Webb, CEO of the Arkansas Hunger Relief Alliance, Little Rock City Council member, and Vice Mayor, as the well-deserving recipient of this distinguished award.
Gaines House, a non-profit organization with 501(c)3 status, provides a supportive and empowering environment for homeless women with disabilities who are seeking to transition into independent living. Located in the historic Quapaw Quarter, Gaines House offers a warm and homelike atmosphere where residents can thrive. Every woman residing at Gaines House is required to either be in training for employment or attending an outpatient treatment program, ensuring comprehensive support to help rebuild their lives.
Since its establishment in 1967 by a coalition consisting of the Junior League of Little Rock, Altrusa International of Little Rock, Inc., and the now-dissolved Pulaski County Mental Health Association, Gaines House has positively transformed the lives of over 3,500 women from across Arkansas who have been diagnosed with disabilities. Impressively, 90% of program participants have successfully achieved rehabilitation and become contributing members of our community.
“The Gaines House provides an invaluable service to our community, offering a supervised residential environment that prepares homeless disabled women for independence,” stated Mary Krikorian, managing partner and event coordinator for Vibrant Occasions Catering. “We are honored to be part of this noble cause and contribute to fundraising efforts that provide maintenance and upgrades to the facility, programs for the residents, and essential administrative needs.”

Chocolate Covered Strawberries
12 Fresh Strawberries
1/3 pkg. Dark Almond Bark
White Almond Bark, optional
Melt the almond bark in a microwave safe container in the microwave at 30 second intervals until completely melted, stirring frequently.
Hold strawberry by stem and dip into chocolate, leaving a small bit of red exposed near the stem.
Set on parchment paper to harden.
Optional: After chocolate hardens, drizzle with white chocolate almond bark that has been melted in the same way as the dark chocolate.

Mini chocolate chips
Toasted pecan pieces
Chocolate Syrup
Caramel Syrup
Using a pre-made cheesecake, sprinkle the chocolate chips and pecans on top and then drizzle with the chocolate and caramel syrups.

Tortellini Caprese
3 Tbls. unsalted butter
1 shallot, finely diced
2 garlic cloves, crushed
2 pints of cherry tomatoes, sliced in half lengthwise
1 package cheese tortellini
10 fresh basil leaves, whole
1 oz. parmesan, shredded
½ oz. pecorino romano
Kosher salt and ground black pepper, to taste
Aged balsamic vinegar
Basil pesto sauce, optional
In a large, heavy skillet, melt 1 tablespoon of butter over medium heat. Add the diced shallots and saute for approximately 2 minutes. Add the minced garlic and saute for another 2 minutes until fragrant.
Add the remainder of butter and melt. Add the sliced tomatoes and 5 whole basil leaves and cook until tomatoes start to wilt, approximately 5-7 minutes.
Season with salt and pepper. Sprinkle with parmesan and romano cheeses.
Meanwhile, cook the tortellini according to package directions. Drain, reserving a couple of tablespoons of the past water. Add the pasta and reserved pasta water to tomato sauce and stir to combine.
Chiffonade the remaining 5 basil leaves and sprinkle over the top of the pasta, along with additional cheese, if desired.
Serve the pasta drizzled with aged balsamic vinegar and, if desired, store bought basil pesto sauce for an additional punch of basil flavor.

Baked Cod with Chermoula Sauce
For the Sauce:
1 cup Cilantro Leaves
2 cups Parsley
1 Tbls. Fresh Mint
4 Cloves Garlic
1/2 tsp. Salt
2 tsp. Ground Cumin
1 tsp. Ground Coriander
1 tsp. Smoked Paprika
1/4 tsp. Red Pepper Flakes
Pinch of Saffron (optional)
1/3 cup Extra-Virgin Olive Oil
1/4 cup Freshly-Squeezed Lemon Juice (about 1 large lemon)
For the Fish:
4 6 oz cod
4 Slices of fresh lemon
Add all ingredients for the sauce into a food processor and pulse until it makes a thick paste.
Refrigerate for 30 minutes.
Preheat the oven to 350 degrees fahrenheit
Drizzle the fish on both sides with the chermoula sauce. Place one lemon slice over each piece of fish.
Bake for 12-15 minutes, or until the fish is flaky and cooked to an internal temperature of 145 degrees.

How To Dice a Tomato | Cooking with the Kriks
Learning how to dice a tomato properly may seem like a small detail, but it can greatly impact the taste, texture, and visual appeal of your culinary creations. In season 3, episode 4, chef Serge is showing us the proper way to dice a tomato.

Learning how to dice a tomato is important for a few reasons.
- Uniformity: Ensuring that the pieces are uniform in size and shape is beneficial for both presentation and cooking purposes. If you’re using diced tomatoes in a recipe, having consistent pieces will help them cook evenly and maintain their shape.
- Even Cooking: Each piece should maintain a similar thickness allowing the tomato to cook evenly to ensure that all the pieces are cooked through at the same time. This can be particularly important if you’re using the diced tomatoes in a sauce or stew.
- Texture: Irregularly-shaped or poorly-cut pieces can result in uneven textures in your dish. By dicing the tomato evenly, you’ll create a pleasing texture that adds to the overall eating experience.
- Presentation: Properly diced tomatoes look neat and appealing, especially when used as a garnish or in salads. When all the pieces are of similar size and shape, it creates a visually appealing dish. This is particularly important when presentation matters, such as in professional culinary settings or when entertaining guests.

Here’s a step-by-step guide on how to dice a tomato:
- Place the tomato on a cutting board with the stem end facing up.
- Take a sharp knife and slice off about 1/4 inch off the top end (where the stem is).
- Make even slices of about 1/4 inch each, going from top to bottom. Try to make them as straight and even as possible.
- Now turn the slices on their side, stack them up, and cut them into thin strips. Depending on how large or small you want your dice to be, you can cut the strips into smaller pieces.
- Finally, using your knife, chop the strips into small, even pieces until you have the desired size of dice.

Remember to use a sharp knife to make clean, precise cuts, and be careful when handling the knife and the tomato. With practice, you can become an expert at dicing tomatoes quickly and easily just like Chef Serge!
