Hatch Chile Risotto Recipe

 

Ingredients:

 

– 6 cups Fish Stock

– 1 cup Roasted Hatch Chiles, chopped (approx. 4-5 chilies cleaned, roasted, and de-seeded)

– 1/2 cup Whole Kernel Corn, roasted

– 2 tbsp. Extra Virgin Olive Oil

– 1 Shallot, finely diced

– 3 Garlic Cloves, minced

– 2 cups Arborio rice

– 1/2 cup White Wine

– 1/2 cup Parmesan Cheese, shredded

– Kosher Salt and Fresh Ground Black Pepper, to taste

 

Shrimp Scampi Ingredients:

 

– 2 tbsp. Extra Virgin Olive Oil

– 4 tbsp. Unsalted Butter

– 1 tbsp. Garlic, minced

– 1 lb. Peeled and Deveined Shrimp

– Kosher Salt and Freshly Ground Black Pepper, to taste

– 1/4 cup Dry White Wine

– 1/2 tsp. Crushed Red Pepper Flakes

– Juice of 1/4 of a Lemon

– Chopped Parsley for Garnish

 

Preparing the Hatch Chile Risotto:

 

  1. In a saucepan, bring the fish stock to a boil, then reduce the heat to low.
  2. Heat the olive oil in a deep skillet over medium heat. Stir in the diced shallots and cook until softened, approximately 2-3 minutes.
  3. Add minced garlic and cook for about 30 seconds.
  4. Stir in the Arborio rice and reduce the heat. Cook while stirring constantly for approximately 2 minutes.
  5. Deglaze the pan by adding white wine and allow the rice to absorb the wine.
  6. Begin adding a ladle of fish stock at a time, letting each ladle become completely absorbed before adding the next. Continue stirring constantly, reserving 1 ladle of stock.
  7. Stir in the roasted hatch chiles and corn, then add the last ladle of stock and let it absorb. Season with salt and pepper according to taste.
  8. Garnish with shredded parmesan cheese and drizzle with olive oil.

 

Preparing the Shrimp Scampi:

 

  1. Heat olive oil and 2 tablespoons of butter in a large pan or skillet.
  2. Add minced garlic and sauté until fragrant, about 30 seconds to 1 minute.
  3. Add the shrimp to the pan, seasoned with salt and pepper, and sauté for 1-2 minutes on one side until they just begin to turn pink, then flip.
  4. Pour in white wine (or broth) and add crushed red pepper flakes. Simmer for 1-2 minutes until the wine reduces by about half and the shrimp is cooked through. Be careful not to overcook the shrimp.
  5. Stir in the remaining butter, lemon juice, and chopped parsley. Remove from heat immediately.
