Brazilian Skirt Steak with Chimichurri Sauce
Our first stop takes us to Brazil, where the love for grilled meat runs deep. Skirt steak, known for its robust flavor and tenderness, is a staple in Brazilian cuisine. Traditionally marinated in simple yet flavorful ingredients, it absorbs the essence of the chimichurri sauce, enhancing its taste.
Chimichurri sauce, originating from Argentina, is a vibrant concoction of parsley, garlic, oregano, red chili pepper, and red wine vinegar. Its bright and herbaceous profile complements the rich flavors of the steak. As the thinly sliced skirt steak hits the grill, the fragrance of the chimichurri-infused meat tantalizes the senses, creating a mouthwatering experience.
For the Steak:
2.5 Lbs. Skirt Steak, cleaned
Chimichurri Sauce (recipe follows)
Rub half of the chimichurri skirt steak and refrigerate at least 4 hours, preferably overnight.
Preheat your grill to 400-450 degrees. Place your steak 4-6 minutes per side, until it’s internal temperature reaches 145 degrees.
Let the steak rest for 5 minutes and then slice against the grain. Serve topped with the remainder of the chimichurri sauce
For Chimichurri Sauce:
1.5 Cup Fresh Parsley, stemmed
2 Tbls. of Fresh Garlic, minced
1/4 Cup Fresh Oregano, chopped
1 Tsp. Red Chili Pepper (adjust to taste)
1 Tsp. Kosher Salt
1/2 Tsp. Ground Black Pepper
3 Tbsp. Red Wine Vinegar
1/3 Cup Olive Oil
1 Tsp. Fresh Mint, chopped
Combine everything in a food processor. Blend until chopped and combined.
Mexican Street Corn
Next, we venture into the bustling streets of Mexico, where the vibrant culture comes alive through its street food. Mexican Street Corn, or “Elote,” is a beloved classic found on street corners throughout the country. This dish showcases the delectable combination of sweet corn cob, creamy mayo, tangy cotija cheese, and smoky spices.
The corn is grilled to perfection, allowing the natural sweetness to caramelize and intensify. Slathered with garlic mayonnaise, it provides a luscious contrast to the salty crumbles of cotija cheese. Finally, a sprinkle of cilantro and chili powder adds freshness and a kick of heat, creating a symphony of flavors that will transport your taste buds to the vibrant streets of Mexico.
4 Ears Sweet Corn on the Cob
2 Tbls. Unsalted Butter, softened
1 Tsp. Kosher Salt
1/2 Tsp. Ground Black Pepper
3 Tbls. Mayonnaise
1/4 Tsp. Garlic Powder
1/2 Cup Cotija Cheese, crumbled
3 Tbls. Fresh Cilantro, chopped
1/2 Tsp. Chipotle Chili Powder (ancho chile powder works too)
1 Lime, quartered
Peel the corn leaving the husks attached and removing the silk.
Combine the softened butter, salt, and black pepper
Rub the butter mixture over the corn and then re-wrap the corn with the attached husks. Wrap each ear with foil, poking the foil with a fork a couple of times to create vent holes. Place the corn on the pre heated gill for 20 minutes, turning occasionally, until the corn is cooked.
Meanwhile, in a small bowl combine the garlic powder with the mayonnaise. Place the cotija cheese in a shallow baking dish or on a plate.
When the corn is done, remove husks and brush the corn with the garlic mayonnaise. Roll each cob in the cotija cheese and sprinkle with cilantro and chili powder.
Serve with the lime wedges to squeeze over the corn.
Grilled Skillet Potatoes
As we conclude our culinary adventure, we find ourselves savoring the irresistible appeal of Grilled Skillet Potatoes. This dish draws inspiration from the rustic comfort food found across Latin America. With its tender Yukon gold potatoes, infused with a medley of spices like garlic, chili powder, and cumin, this side dish brings a satisfying depth of flavor.
The cast-iron skillet on the grill ensures the potatoes become crispy on the outside while remaining soft and fluffy on the inside. Each perfectly seasoned bite offers a symphony of smoky, savory, and slightly spicy notes. With their golden brown exterior and melt-in-your-mouth texture, these grilled potatoes add a comforting element to our South American feast.
2 lbs Yukon gold potatoes, sliced into 1/2” rounds
2 Tbls. Grapeseed Oil
1 tsp. Kosher Salt
1/2 tsp. Ground Black Pepper
1 tsp. Garlic Powder
1/2 tsp. Chili Powder
1/2 tsp. Ground Cumin
Preheat the grill to medium-high, about 400-450° F.
Put the sliced potatoes in a bowl and toss with oil and and all the seasonings until evenly coated
Place a cast-iron skillet or grill basket on the grill to preheat then transfer the potatoes to the skillet. Grill over direct heat for 15-20 minutes or so, being sure to stir the potatoes to brown them on all sides. Then move to the indirect side for about 10 more minutes, or until the potatoes are golden and cooked through.

Indulge your senses with the tantalizing combination of Brazilian Skirt Steak, Mexican Street Corn, and Grilled Skillet Potatoes. This culinary fiesta takes you on a journey through the diverse flavors and traditions of Latin America. The tender and flavorful skirt steak dances with the vibrant chimichurri sauce, while the creamy, tangy elote and the smoky grilled potatoes bring balance and satisfaction to the meal.
Embrace the spirit of South America as you gather around the grill, savoring each bite and celebrating the rich cultural tapestry that is Latin American cuisine. Whether you’re hosting a gathering or treating yourself to a special meal, this sensational combination will leave a lasting impression. So, fire up your grill, let the aroma fill the air, and embark on a culinary adventure that will transport you to the heart of Latin America.

Stationery Or Passed Hors D’oeuvres at Your Wedding?
When it comes to planning a wedding, every detail counts. From the venue to the flowers, couples strive to create an unforgettable experience for their guests. One aspect that often adds a touch of elegance and sophistication to the celebration is the choice of hors d’oeuvres during cocktail hour. While stationary hors d’oeuvres have their charm, today we explore why passed hors d’oeuvres are the recommended option, especially while the wedding party is busy capturing precious moments with their photographer.
The Art of the Hors d’oeuvre
Hors d’oeuvres are bite-sized culinary creations that tantalize the taste buds and stimulate conversation amongst guests. They set the tone for the rest of the evening, keeping appetites satisfied while creating an engaging atmosphere. Traditionally, there are two popular options for serving hors d’oeuvres: stationary and passed.

The Case for Stationary Hors d’oeuvres
Stationary hors d’oeuvres have their place in certain settings, such as intimate gatherings or events with limited space and logistical constraints. They typically consist of beautifully arranged platters where guests can help themselves. The convenience lies in the fact that attendees can graze at their leisure and enjoy the assortment of delicacies. However, while stationary hors d’oeuvres may be suitable for some occasions, they may not provide the desired impact at a wedding, where creating a memorable and dynamic experience is paramount.
Elevating the Cocktail Hour with Passed Hors d’oeuvres
Passed hors d’oeuvres, on the other hand, offer a unique and interactive experience that can enhance your wedding’s ambiance. Here’s why they are the perfect choice:
- Seamless Service: With professional servers circulating throughout the crowd, guests can effortlessly enjoy an array of delectable treats. This ensures that everyone has an equal opportunity to indulge, regardless of their location in the venue.
- Variety and Presentation: Passed hors d’oeuvres allow for a wider range of culinary options, ensuring there is something to suit every guest’s palate. Additionally, these bite-sized delights are often visually stunning, presented on elegant platters or charming trays, adding an extra touch of sophistication to your cocktail hour.
- Social Engagement: As guests mingle and share conversations, the passing of hors d’oeuvres becomes an excellent ice-breaker. It encourages interaction and creates a lively, convivial atmosphere, setting the stage for an unforgettable wedding celebration.
4. Time Optimization: Cocktail hours usually coincide with the time the wedding party spends taking photos. By opting for passed hors d’oeuvres during this period, you ensure that guests are well attended to, even when the bridal party is occupied. This avoids any lulls or moments of boredom and keeps energy levels high.

When it comes to crafting the perfect wedding, details matter, and the choice of hors d’oeuvres plays a significant role in shaping the overall experience. While both stationary and passed hors d’oeuvres have their merits, the latter provides an elevated touch, adding an element of novelty and excitement to your cocktail hour. By opting for passed hors d’oeuvres during the time when the wedding party is engaged with their photographer, you ensure guests are entertained, engaged, and well-fed, setting the tone for a truly unforgettable celebration.
So, let your cocktail hour sparkle with the charm of passed hors d’oeuvres, elevating the senses of your guests and leaving a lasting impression on their palates as they toast to your love and happiness.

How To Dice a Tomato | Cooking with the Kriks
Learning how to dice a tomato properly may seem like a small detail, but it can greatly impact the taste, texture, and visual appeal of your culinary creations. In season 3, episode 4, chef Serge is showing us the proper way to dice a tomato.

Learning how to dice a tomato is important for a few reasons.
- Uniformity: Ensuring that the pieces are uniform in size and shape is beneficial for both presentation and cooking purposes. If you’re using diced tomatoes in a recipe, having consistent pieces will help them cook evenly and maintain their shape.
- Even Cooking: Each piece should maintain a similar thickness allowing the tomato to cook evenly to ensure that all the pieces are cooked through at the same time. This can be particularly important if you’re using the diced tomatoes in a sauce or stew.
- Texture: Irregularly-shaped or poorly-cut pieces can result in uneven textures in your dish. By dicing the tomato evenly, you’ll create a pleasing texture that adds to the overall eating experience.
- Presentation: Properly diced tomatoes look neat and appealing, especially when used as a garnish or in salads. When all the pieces are of similar size and shape, it creates a visually appealing dish. This is particularly important when presentation matters, such as in professional culinary settings or when entertaining guests.

Here’s a step-by-step guide on how to dice a tomato:
- Place the tomato on a cutting board with the stem end facing up.
- Take a sharp knife and slice off about 1/4 inch off the top end (where the stem is).
- Make even slices of about 1/4 inch each, going from top to bottom. Try to make them as straight and even as possible.
- Now turn the slices on their side, stack them up, and cut them into thin strips. Depending on how large or small you want your dice to be, you can cut the strips into smaller pieces.
- Finally, using your knife, chop the strips into small, even pieces until you have the desired size of dice.

Remember to use a sharp knife to make clean, precise cuts, and be careful when handling the knife and the tomato. With practice, you can become an expert at dicing tomatoes quickly and easily just like Chef Serge!

Our Favorite Margarita Recipes Revealed
Chef Serge Krikorian with Vibrant Occasions originally revealed these refreshing recipes on THV11’s The Vine show with Ashley King and Skot Covert along with his pollo asado tacos recipe which we blogged here. In case you missed that episode, we are going to reveal these timeless recipes here today for our dear readers, so you can enjoy this classic drink next time you need a little pep in your step! But first, let’s take a look at some helpful information about margaritas to get us in a festive margarita mood.
Margaritas are a popular cocktail known for their refreshing and tangy flavors. The origins of the margarita are a little unclear, but there are several theories regarding its history.
One popular theory suggests that the margarita was created in the late 1930s or early 1940s by a Mexican bartender named Carlos “Danny” Herrera. As the story goes, he created the cocktail for a customer who was allergic to all alcohol except tequila but found it too harsh to drink straight. Herrera combined tequila with lime, salt, and ice, resulting in the creation of the margarita.
Another theory is that the margarita was invented by socialite Margaret “Margarita” Sames in the late 1940s at her vacation home in Acapulco, Mexico. She supposedly mixed tequila, lime juice, and Cointreau, and the cocktail became a hit among her friends.
Regardless of its true origin, the margarita gained popularity over the years and has since evolved with numerous variations and flavors. Classic margaritas typically consist of tequila, lime or lemon juice, and an orange liqueur like triple sec or Cointreau. However, nowadays, you can find various fruit-flavored margaritas such as strawberry, mango, watermelon, or pineapple, which add a delightful twist to the original recipe.
Margaritas can actually be healthy but moderation is key. While margaritas can be enjoyed as a social beverage, it’s important to remember that they do contain alcohol. Tequila, the main ingredient in margaritas, is made from the blue agave plant and is believed to have certain health benefits when consumed in moderation. It may help lower blood sugar levels, promote good gut bacteria, and even aid digestion. However, it’s vital to enjoy margaritas responsibly and in moderation to avoid any adverse effects.
Mixing a delicious margarita can be a fun and creative process. Whether you prefer the classic version or enjoy experimenting with different flavors, margaritas are a beloved cocktail that continues to delight people around the world.

Denver Favorites: Pork Green Chili & Funky Monkey French Toast Recipes
Chef Serge Krikorian shared the pork green chili and funky monkey French toast recipes on THV11’s The Vine TV show with Adam Bledsoe and Ashley King, but if you missed this episode, not to worry! We are going to share these delicious recipes with you here in this blog post plus give you, our dear readers, some information about these Denver, Colorado favorites. Denver’s food scene is known for embracing innovative and unconventional dishes and is home to many creative and passionate chefs who constantly experiment with flavor combinations, and these dishes highlights that ingenuity.

Pork green chili is a delicious and savory dish that has become a beloved favorite in Denver, Colorado. It consists of tender chunks of pork slow-cooked with green chilies, onions, garlic, and various spices. This dish embodies the flavors of the Southwest and has become a staple in Denver’s culinary scene.
There are a few reasons why pork green chili has gained such popularity in Denver. First off, the city has a strong Mexican and Tex-Mex food influence, and green chili is a mainstay in these cuisines. Denver has also been historically known for its large Hispanic community, contributing to the popularity of this dish. Another reason why pork green chili is a Denver favorite is its versatility. It can be enjoyed as a standalone soup or stew, or used as a topping for various dishes like burritos, enchiladas, or even burgers. The rich and smoky flavors of the green chilies combined with tender pork create a satisfying and comforting meal. Denver’s high altitude climate also plays a role in making pork green chili a beloved choice.
