1 tsp. Kosher Salt

1/2 tsp. Ground Black Pepper

3 Tbls. Mayonnaise

1/4 tsp. Garlic Powder

1/2 cup Cotija Cheese, crumbled

3 Tbls. Fresh Cilantro, chopped

1/2 tsp. Chipotle Chili Powder (ancho chile powder works too)

1 lime, quartered

 

Instructions:

 

  1. Peel the corn, leaving the husks attached, and remove the silk.
  2. Combine softened butter, salt, and black pepper, and rub the mixture over the corn. Re-wrap the corn with the husks and wrap each ear in foil, poking the foil with a fork to create vent holes.
  3. Grill the corn for 20 minutes, turning occasionally until cooked.
  4. Mix garlic powder with mayonnaise in a small bowl. Place cotija cheese on a plate.
  5. Remove husks, brush the corn with garlic mayonnaise, roll in cotija cheese, and sprinkle with cilantro and chili powder.
  6. Serve with lime wedges.
