Mushroom & Caramelized Onion Grilled Cheese Recipe



– 1/4 Yellow Onion, julienned

– 1 Portobello Mushroom, thinly sliced

– 1/4 tsp. Fresh Garlic, minced

– 3 Tbls. Unsalted Butter, divided

– 4 Sliced Smoked Gouda

– 2 Slices Texas Toast

– Kosher Salt & Ground Black Pepper, to taste

– 1/4 tsp. White Sugar



  1. Heat a pan over medium-high heat and add 1.5 Tbls. butter to melt.
  2. Add the onions and sugar, lower the heat, and saute until onions are caramelized.
  3. Add the mushrooms and garlic to the skillet and season with salt and pepper to taste. Saute until mushrooms are cooked.
  4. Place 2 slices of gouda onto one slice of bread. Spoon mushroom/onion mixture over the cheese and top with 2 more slices of gouda. Top with remaining slice of bread.
  5. Melt remaining 1.5 Tbls. butter in the skillet and coat both sides of the sandwich with the butter.
  6. Toast the sandwich over medium heat until the bread is nicely browned and the cheese is melted.
